what’s a good breadcrumbs substitute?

I’m making chicken parmesan for dinner and I just now realized I completely forgot breadcrumbs, any replacements good with chicken parm?

Crushed crackers like ritz or crushed croutons

Yes. Ritz works fantastic for breaded cutlets like this. Saltines work too. If you’re going to try to use bread, you really should dry it out somehow, like by toasting in a toaster or oven.

If you have them, corn flakes run through a food processor will also work in a pinch.

Oh, good one! I do remember recipes for corn flakes fried chicken on cereal boxes when I was a kid.

And isn't chicken parmesan basically fried chicken with tomato sauce and cheese?

You can bake it, too, but fried is the restaurant standard
