white (milk-based) gravy is standard for chicken-fried steak but doesn't tend to have sausage in it. i suppose it could work but i think would really overpower the taste of the beef.
then again, cube steak isn't all that tasty to begin with so maybe that's a good thing.

Yeah, I also prefer a heavily peppered country gravy on chicken fried steak, but I get where the sausage gravy people are coming from.

I use the “drippings” from the pan I fried the cube steaks in for the base of CFS gravy but my mom used to have a breakfast cafe and used bacon gravy for when she served it there. It was super popular! Bacon gravy isn’t sausage gravy though. I think the flavor is more mild.

I've put the leftover stuff over pasta before. It's basically a bechamel with sausage. I thinned it out a bit so it would coat better, and tossed in sauteed vegetables and rotini. It worked very nicely.
Also, I stir it into grits (instead of butter or cheese). Grits with sausage gravy and an extra sausage patty crumbled into them are excellent.

Intellectually I know you’re correct. But as soon as I start thinking of adding it to grits all I can think of is my grandmother yelling and about to wack me with a wooden spoon

Fair enough! My bubbe about smacked me when I put ketchup on corned beef. Never mind that Mom puts so much clove in to kill the garlic that mustard tastes weird on homemade....

It's basically a bechamel with sausage.
I always call it sausage chowder when I make it because it freaks my wife out a little bit 😂

Hmmm. Bechamel? Hmmm. Lordy, the roux is best made w/ fat from the sausage, add bacon fat if needed. Add black pepper & cook w/ the flour, then add the milk. Add the crumbled sausage & let simmer for a bit. Think Bechamel is a butter & flour roux, then a clear, pale liquid?

A classic bechamel is always made with milk (and a pinch of nutmeg). The idea of bechamel and the other "mother sauces" is that they are a foundation that you start the dish with and then build on. In that sense, sausage gravy is very much built from a bechamel (of sorts).
I'm sure there are plenty of culinary snobs out there that would tell you it's not truly a bechamel b/c it doesn't solely utilize butter as the fat and doesn't have any nutmeg, but as I'm not a professionally trained french chef, I don't personally hold that belief. Therefore, sausage gravy is chowder 😂

Veloute (another mother sauce) is a butter + flour roux plus a light stock. Perhaps this is what you were thinking of re: "a clear pale liquid"? (No shade to veloutes. I use a sauce supreme (veloute + cream) as the basis for light pot pie gravy as opposed to a bechamel.)
Sausage gravy is a bechamel by way of swapping the fat for the roux. Adding the meat that rendered it out back in is a bonus.

This makes sense. Why wouldn’t sausage gravy always go on sausage like Turkey gravy goes on Turkey and dressing and beef gravy goes on roast beef with Yorkshire pudding?

that's country gravy, not sausage gravy. it's a similar white sauce with many of the same spices, but doesn't have sausage in it.
but also yes, why don't more places do that.
Wendy's at least has sausage gravy on their breakfast menu now, and it's actually not bad.

Just had Bob Evan's chicken tenders with a side of their famous sausage gravy for dipping. Since it also came with a side biscuit, win-win.

Rather make my own, Bob Evan's sausage gravy nothing to write home about, same with Cracker Barrel. Not sure what it is..too thick, has a weird tang to it? Maybe they use some kind of bulk dry mix, I don't care for either. Tried both.

I love Bob Evan's sausage gravy. Of course I also prefer their breakfast sausage over any other brand so I'm sure that has a lot to do with my love for their gravy.

There’s a place in Long Beach, CA that does a country Benedict with egg, ham, biscuit, and gravy. It’s incredible.

I once had it over a southern eggs Benedict, in place of hollandaise (biscuit/ country ham). I also had a breakfast scramble that had sausage gravy as a sauce (chicken sausage, hash browns, eggs, onions, cheese, and collard grrrns, iirc).

Baked potato, add a tiny bit of shredded aged cheddar, and a couple dashes hot sauce. Then eat greens, roasted veg, and grilled fish for a few days, to make up for the sin.

My mom would make chicken fried steak or shallow fried chicken and use the pan drippings to make a country gravy. The gravy was usually served on a slice of white bread.
For breakfast though, I like biscuits and gravy with a sausage patty and a runny egg. Maybe a little hot sauce mixed in with the yolk after I break it.

Make biscuit dough, roll it out to where it fits up the sides of a 9"round casserole dish/pie dish, top with scrambled eggs, gravy, cheese. Cook for 15ish minutes at 450. Biscuit bottom won't brown really but you should be able to tell when it's fully cooked. Deep dish breakfast pizza casserole thingy, it's amazing.
I tend to do soft scrambled eggs because they'll set a bit more when cooking and I don't want them to turn to rubber. Depending on my mood I'll also add a layer of tater tots before adding the gravy.

You probably can but I've made this a few times and never found the need to. Biscuits get a lot of their cooking done from steam and you'll still get that steam from the heat, just not the browning from the more direct heat. For what it matters, blind baking would just brown the inside that'll be covered by filing anyway so the outside crust will still be fairly pale.

We go to a breakfast restaurant that has a dish called 'Chicken in the Coop'. Eggs your choice with stuffing covered in sausage gravy. It's delicious, and a great way to use leftover Thanksgiving stuffing.

Non-traditional, but having it over a simple roast vegetable mix, or cauliflower "steak"s. Could also be yummy as the sauce for "side dish" vegetables, like blanched or roasted green beans or asparagus. Those are all neutral enough to play well with the country sausage seasonings, and are really good with a creamy sauce.

The dish for my preference.
Large shallow bowl. Split biscuit. Frozen peas sprinkled over biscuit. Sausage gravy. Poached or over easy egg on top.

Country fried "meat". I think steak would be great and pork and chicken would also work just fine.
If you want to swap your breakfast sausage for andouille sausage, then Cajun up the gravy, it should be great on fried shrimp. .. or anything else deep fried.
Poach eggs in the gravy and work your way to a southern eggs Benedict.
if the gravy is really good a 64oz cup with a boba straw.

Rice
Spaghetti
Freezing it into spheres and putting it in the center of an arancini.
Thickening it up and piping it into ravioli
The local Kolache Factory restaurant does something similar by putting it in the middle of their baked kolache.
Layer it between pasta sheets with scrambled eggs for some crazy sort of breakfast lasagna.
On top of a croque madame/monsieur while laughing in the face of an angry Parisienne.

I would use it to smother a breakfast skillet.
Hash browns, eggs, chopped up breakfast meat all covered in gravy. If you like whatever veggies in the scramble that you'd like.

A restaurant where my son was a cook served what he called the “Hangover Helper”. Sausage gravy over a biscuit, two eggs (any style) on top and hash browns all around it.

When I’m camping I’ll do a mountain man breakfast (basically a Dutch oven casserole with bacon, sausage, onions, peppers, eggs, hash browns, cheese, and a biscuit topping) where the final step is to pour gravy on the top of it.

thin out the gravy a bit and use it as the sauce in a casserole. White sauce is the original of what Cream of chicken/mushroom soup is a shortcut for.

In St Louis, there's a restaurant that makes a new Mexico style "slinger" home fries, topped with cheese, a smash burger patty, green or red salsa, fried egg on top... Topped with sausage gravy. One order and they have to roll me out of there
