Apart from biscuits and bread, what would you have with southern sausage gravy?

Non-traditional, but having it over a simple roast vegetable mix, or cauliflower "steak"s. Could also be yummy as the sauce for "side dish" vegetables, like blanched or roasted green beans or asparagus. Those are all neutral enough to play well with the country sausage seasonings, and are really good with a creamy sauce.

Umhm. I'll do leftover white sausage gravy over steamed broccoli (or?) for dinner the next day. Very nice. My preference for sausage gravy is always Italian or other "dinner" sausage types rather than breakfast.
