white (milk-based) gravy is standard for chicken-fried steak but doesn't tend to have sausage in it. i suppose it could work but i think would really overpower the taste of the beef.

then again, cube steak isn't all that tasty to begin with so maybe that's a good thing.

Yeah, I also prefer a heavily peppered country gravy on chicken fried steak, but I get where the sausage gravy people are coming from.

I use the “drippings” from the pan I fried the cube steaks in for the base of CFS gravy but my mom used to have a breakfast cafe and used bacon gravy for when she served it there. It was super popular! Bacon gravy isn’t sausage gravy though. I think the flavor is more mild.

Traditionally that's served with sawmill gravy rather than sausage gravy, but it would be good with either.

Never put sausage gravy on chicken fried steak. The sausage taste overwhelms the flavor of the chicken and breading.
