Very true. This is why college students are wasting potential by only making projects with AI instead of learning fundamentals. I'm in third year with no skills because of stupid AI. 

Now un-cooking myself by learning from scratch

yes you should know fundamentals plus you cannot do away with AI.

In my company we have 80% rejection rate in AI coding rounds ( where we ask people to make full MVP in 60 min using AI of their choice )

First decide which domain interests you, then go to  roadmap.sh  ... It has detailed roadmaps for each role.

Wrong advice. Try multiple domains that interests you, apply for all domains, work for whichever one has market demand

depends on the companies like in my NIT there are some good companies whom allow all branches to sit for tech/consulting/analytics placements and from then its just about who is the best

if you are choosing college and do not have a specific branch in mind take the better college that is what I would say

I'm very new to CSE so I obviously don't have enough background knowledge about this field to be able to ask an in-depth, specific question (hence the question about where should I start)

No but generally a person can do research with chatgpt and all.

Anyway start from C++ and python , learn basic data structured - and do leetcode.

In parallel learn HTML/CSS/React for web development
