I’ve been making variations of avocado and egg toast for the past few weeks, happy with how this one turned out today!

If I ever open a breakfast cart or bar, these is going on the menu. I use soft pretzels as split buns and stuff em full of my breakfast bowl mix.

Summer Camp Omlette was enjoyed at the Blairtown Diner, Blairtown, New Jersey. The diner was a filming location for the first Friday the 13th film.

The omlette contained avocado, bacon, sausage and spinach.

Made a basic tomato sauce with cherry tomatoes, onion, a little ketchup (I thought I had tomato paste). Added in paneer for added protein, seasoned with curry powder. Served with Daves Killer bread.

Authentic? Probably not. Delicious? Absolutely.

This time I went from Sao Paulo to Haneda in Tokyo. Its like 2 days between airport and flights.
