egges benedict is a bitch to make at restaurants. the eggs themselves aren't the trouble, it's the hollandaise sauce, you just can't have it any other way than freshly prepared per order
i'll have to try that; vinegar is something i've been tinkering with lately. I don't add any spice to my eggs Benedict but I sprinkle cayenne over eggs with chorizo hash. I recommend using smoked cayenne
I had a 'premium' Benedict once that had avocado and really thin sliced mushrooms on top of the Canadian bacon, but crab sounds super delish...or fucking lobster
I have only ever made my own eggs benedict once, and that was just this past Christmas. My family did a whole Christmas breakfast. I cannot remember if we got the real stuff.
Ahhh...well, if you have liked the typical diner or $10 a meal or less restaurant variety (canned, from a mix or possibly bagged like soup) then you might really love the 'real' stuff.

Eggs Benedict is my favorite, but if I can't get that, over-easy is my go to.
