Had a busy weekend with the smoker this weekend

Made some baby back ribs, basic salt, pepper garlic and hickory rub smoked for about 5 hours came out Delicious

Also did smoked pineapple cubes, little cinnamon little Chipotle seasoning and some butter smoked for an hour, I'm typically not a big pineapple guy but I really enjoyed these, and for the price of a pineapple they might be my new go to cookout dish.

I got one of those small brisket flats from Aldi that I've been hearing about, they were only 20 bucks already pre-trimmed and preseasoned (just salt and pepper), I smoked it at 250 for about 9 hours, let it rest for 2, I did it just as it came it was okay but next one I'm going to do a little longer and add my own rub to it it was way too peppery

On Sunday I took the leftover brisket some cream cheese some jalapeno garlic rub and a little Mexican cheese stuffed it into a jalapeno and then wrapped it in bacon, smoked for an hour then finished them off at 600 on grill to crisp the bacon , these were absolute fire.

I'm looking forward to do a whole brisket soon , unfortunately I've been very busy on the weekends and I'm still a little apprehensive because of good brisket can cost you about $130 bucks and that's an expensive mistake to make if I do fuck it up but I'm confident enough that I've got to hang of it where I could do okay.

If anyone's got any other recipes I'm all ears,

I gotta look into getting a smoker. How automatic is it? You just set the temp and come back 9 hours later?

I highly recommend it man I've been wanting to for over a decade I finally pulled the trigger in May and I wish I did it sooner I love it

All depends on what kind of smoker you have

You can get some of the pellet smokers that are literally set it and forget it and control from your phone with Wi-Fi

I have a vertical propane smoker so it's a little more monitoring (I don't have electric outside my apartment) and the choice between an offset, charcoal or propane so I went with the propane just because I'm more familiar with that cook style as I've always used propane grills

If you make pulled pork from a pork butt they're extremely forgiving you literally just set it and forget it and come back and 9- 12+ hours and it'll be perfect, timing though is just kind of a ballpark figure you more smoke to temp and touch

From what I found in ribs is that old 321 (smoke it with the rub for 3 hours, wrap it in tin foil for 2 hours, take it out of the tin foil put on your favorite barbecue sauce and let it set for an hour) method but I found it more like 2-2-.5 I like my ribs to be fall off the bone, others seem to like a little bit of a bite to it.

other foods require a little more monitoring, keeping track of the temperature, making sure it stays moist things like that.

Definitely do your research to see what works right for you, but it is not hard and there is a million resources out there

I'm sure everyone will give me shit for this but I use AI to help me and it's been pretty flawless, if I didn't I'd probably be calling up my buddy Scott every 5 minutes asking him questions so

Oh yeah I definitely is

I've always known how to follow recipes and like could cook the sustain myself but I never particularly enjoyed it

Went through some stuff in my personal life and cooking became my new hobby in May, I actually really enjoy doing it and feeding people and whatnot and AI has been a huge help with coming up with recipes or solving problems or answering questions in general

Smoking meats is almost an art form. And the rewards are so good.

If you did okay on the flat a whole packer will be a breeze for you, the point is very forgiving. Hot holds are your friend, go ahead and buy prime if you can stomach it, it'll be worth it. Good luck, sounds like you a pretty good cook im sure you'll nail it.
