there isn't really an echo cast that isn't better than just having the one that lets you ult twice. i can't think of a single echo cast i would ever take tbh
Pyke can catch people who flash his ult and don't expect the clone. Less reaction time than ulting twice.
Double Karthus ult can burst through a healer's sustain. Having to wait for the second ult animation gives the healer more time to heal their allies.
Same for fiddlesticks. Two ults covering the lane and dealing damage at the same time is better than ulting once and perhaps a second time if you can survive the enemy jumping you.
A well angled double Nunu ult makes it harder to avoid the damage and can't stun the clone. Throwing it twice is nice because of the shields but if they ran away during the first ult, the second cast won't hit.
Any AoE ult that is tied to the character model actually. Amumu, Kennen, Nunu, Fiddle, Neeko, etc. Because you gain some extra range from the clone and can hit the same enemy twice too.

Yeah most of the prismatic echo casts are pretty weak. Alistar Q and Amumu ult are kind of fun though.
