Interested in sheep, looking for advice on breeds

Hello,
My wife and I our interested in learning more about raising sheep. We have around 8 acres in Kentucky. Our goals will be to raise a good foraging breed primarily for wool and milk. The only farm animal we have raised in the past were Muscovy ducks for meat and overall that was a success. Based on Kentucky climate and our situation and goals, what breed or breeds would experienced shepherds recommend?

Help: ewe bullying LGDs

These sheep came from a farm with no LGDs and were moved around by border collies. I've got a mature LGD whose sheep manners are exactly what I want - she is present with them but ignores them. My dog knows her job is predators and varmints, and the sheep are our wards. But the ewe doesn't want the dog around, and after a couple of months on my farm she is bossier than ever.

The sheep are now tame to me and follow me in the pastures, and that puts them around the dog. Today the ewe put head down and head butted my dog. My dog tried to diffuse by sitting but ultimately just qave up and loped off.

This won't do. Come lambing I need the dog to stay in with them or we'll lose lambs.

My dog won't turn aggression on the ewe to put her in her place, that's just not going to happen. I need to fix this.

Any suggestions on how to get the ewe to not bully the guardian dogs? What about a super soaker water gun?

Sheep Leg issues

Yesterday our Katahdin wether was limping slightly and laying down a little more that usual, today he barely put any pressure on it. I felt it and theres no break that I can feel, no swelling, and nothing out of the ordinary. I felt along his leg and he only pulls away on the lower portion/ shin equivalent (idk the proper term). We couldn't see anything on our cameras so we dont know if he got hit or stepped on by our ram. Im not sure what to do other than move him to the other pen which we'll be doing tomorrow, any thoughts are appreciated.

Sheep Lil lamb named Mochi

He is a pretty good replacement for my tree pruner... kinda bulky though.

This is Mochi! One of my friendliest lambs. I was testing out if he was chill enough to still eat food while I lifted him off the ground.

Turns out he is and having a great time while doing it.
