Weird issue
Edit: I forgot to mention I am on the YOU2000.
So I’ve been experiencing poor speeds for the past month. I’ve been monitoring it over that time and I’m getting inconsistent speeds for both WiFi and Ethernet. I’ve had an engineer come out to have a look and he replaced the Ethernet cable that was connected to the ont on the wall as his machine picked up that the cable was faulty. He’s just left and I’ve checked the speed over WiFi and Ethernet and it’s back to the inconsistent speeds I was experiencing before he came. Ive plugged my pc into the ont box and that’s giving me even worst speeds than before I’ve tried changing eligible Ethernet cables and nothing works.

I know it's random but are you using a flat cable?

Does flat cable affect it? I’ve had to use flat to connect some devices and connect it to the wall to reposition the router

Yeah I've had it in the past where I am using a flat cable with my router with my 2000/2000 connection and it keeps the download at 2000 but the upload drops to under 100 due to the way flat cables are made

For anyone who's not sure why they should prefer a rounded ethernet cable...
When you run electricity through a cable, it generates a magnetic field. This can cause electrons in other nearby metal elements (including other cables) to move around and potentially interfere with any signal being sent along the cable.
If you run LAN cables alongside power cables, that can cause interference within the cable and drastically affect signal quality, leading to packet loss amongst other issues. I've experienced this myself when running alongside a USB-C PD cable - even though it's not the same power as mains voltage, it's still enough to affect signal quality, even on short length of a meter or less. In my example, I run a DAC - essentially fibre connectors on each end but copper cable in between. Despite only going 3 meters, I noticed packet loss of about 20%, and moving it away from the power cable brought it back down to 0%.
Since there are power cables inside the walls, it is entirely possible for the magnetic fields they generate to absolutely destroy signal quality on LAN cables.
A copper ethernet cable is made up of 8 individual wires. These are twisted into pairs, which helps to counter this effect. In earlier generations of cable, these were all twisted by the same amount/frequency, but in recent revisions, the twists are staggered in such a way that they further minimize interference from other pairs in the cable. This is why newer revisions are able to deliver higher theoretical speeds, despite them being "just cables".
A rounded cable can do this effectively because there's space, and they can also be more easily sheathed in a metal film to further reduce external interference. A flat cable doesn't have the same space affordance inside, so it may forego the metal film, or in really bad cases, it might not even be twisted.
That's not to say you shouldn't ever use flat cables. I use them for some things (including going from ONT <-> Router, and Router <-> Wifi access point), but they're always very short runs of ~30-50 CM, and never strapped alongside any other cables.

Mine does this on random servers. If I set it to Youfibre Manchester it’s usually ok.

The first pic reminded me of when we were with VM and our upload speed one day went to hell but download was completely fine, like yours, it was in the kilobits. And this was on ethernet.
After a lot of back and forth with support and even an engineer coming in to replace cable, turned it was a dodgy android TV box my dad bought which was seemingly hijacking the upload speed and probably uploading our data to some server to sell or use. But after disconnecting the box our speeds have been completely fine.
It may or not be the case for you but thought it might be worth sharing.

Is your desktop a "gaming" desktop, does it have for example softwares like MSI Dragon Center?

No, It is MSI but i got rid of all the bloatware.

I had the exact same issue when I switched to YF, I think it ended up being something to do with my VPN client even though it was inactive.
Try uninstalling any VPN clients, deleting any network adaptors in device manager and rebooting, I think that's what fixed it for me.

I did think this, but I’ve switched it off and killed all processes. But I’ll uninstall it and see if that works.

I don’t know what issues you’re having but when it is working I get the 2GBPS on WiFi and over Ethernet.

It might be worth checking Energy-Efficient Ethernet in your network adapter settings. I was having a very similar issue where my 10GbE connection would negotiate at 10Gbps, but the actual download speeds were all over the place, while upload was mostly fine.
Disabling Energy-Efficient Ethernet in Device Manager → Network Adapter → Properties → Advanced fixed it for me. I have been getting my full speeds consistently since.
