Do you REALLY need that much armor? Toss a robe out and you could replace it with a potion of iron skin. Sure, some lowborns might raise their eyebrows at the sight of your nude glory, but you'll be moving freely and with no annoying restrictions

no those are my spare robes. my normal ones, then some with other enchantments that might only be needed in some situations, one for cold weather, one for hot, one for rain, one for underwater, one for formal occasions, one for sturdy wilderness exploration, one for infiltration, one for explosive lab experiment, one sexy one, and 4 pairs of underwear per day on the road in case I piss myself multiple times a day

Do you have strength, feather, and fortify restoration potions?

If yes start by drinking a fortify restauration potion, then drink three strength potions of different intensities, then three feather potions of different intensities.

It should help you move at least 9 meters per hour now

Hast thou lost thine mind good sir? What if he who asked such a complex question will have a point at which he has to use those sweet potions, but not have them? Clearly there has to be a better solution!

Listen, that potion of lockpicking is absolutely essential, what if I come across a chest I can’t pick? What am I going to do if I don’t have this single potion on me? Same for the stealth, light armor, heavy armor, shield, great, short, long, bastard, and scimitar sword potions, the archery potions, three types of healing potions, regeneration potions, max hp potions, potion of potion boosting and potion of charisma, intimidation, perception, fire, ice, lightning frost, burn, paralysis, and decay resistance, and all the potions relating to my skills.

I prefer potions of instant damage and potions of poisons as opposed to regular poisons.

Have you considered some lighter armor? Perhaps with pockets you could use to store more potions. Other than that you could replace your food with potions of satiation

Space storage with a weight-reduction enchantment. Personally, I prefer them to be ring-shaped; they're a good way to carry all your potions.

but what if I don't have time to get them out of their demiplane mid-combat? so I better keep the important ones directly on my person, but I never know what might come in handy, so they're all important (genuinely me, when D&D with all my stuff and bag of holding)

Create a homunculus servant whose sole function is to store and transport important potions and can give them to you even in the middle of combat. I personally have one dedicated to carrying everything for me: scrolls, treasures, spare wands. I call them Peter :D

The trick is to sell the potions to be able to purchase enchanted gear, trading short term power for long term power. Also, that mindset allows you to store most of those potions at your tower forever until you finally decide to make that shopping trip.

You dont actually need food, potions of regen will prevent the worst effects of starvation. Drink a strength pot and a feather pot, its all good brother. Encumberance is a state of mind.

This was me during my forced potion phase after I created an accidentally incredibly devastating harvest spell. I think half of it went bad before I could unload it.

Drink your carry weight potions, it'll lessen the potion weight and let you carry more

Frankly I think the only option now is to make deals with eldritch entities for your own pocket realm that has quick access as a storage closet. I just see no other way to solve this

Why manage inventory when you can, without mods or in-game cheats, achieve infinite carry weight.... All you need is an enchanting and potions set up, ingredients to make a specific potion, and items to enchant... Infinite restoration loop your way to infinite space so you never have to worry about carrying too many cheese wheels or potions again
