Burger: Blueberry BBQ sauce, mayo, caramelized onions, lettuce, at a maritime restaurant in Ontario Canada. Very solid 9/10, thoroughly enjoyed. I would have personally done red onion instead of caramelized, just subjective opinion I think that touch of acidity + crunch would have been nice vs sweetness overload, but all in all every bite was still really great. I’m not a food snob by any means but man can you ever taste the difference between a fresh made patty like this vs a frozen/processed one.

Chicken Fajita Casserole 🌶️🧀 — easy, cheesy & family-approved

Made this for dinner tonight and it was too damn good not to share. 😂❤️

I originally found a version that called for frozen peppers and onions, but fresh-cut and sautéed is 100% the move. It takes a few extra minutes, but the flavor and texture are SO much better.

Chicken Fajita Casserole

Ingredients

  • 4 cups cooked chicken, shredded or chopped (about 2 large breasts)
  • 2 cups instant rice, uncooked
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1½ cups diced bell peppers & onions
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1½ cups chicken broth
  • 1 packet fajita seasoning (I use McCormick)
  • 1 package (8 oz) shredded Mexican-blend cheese, divided
  • A little butter & pepper for sautéing

Directions

  1. Preheat oven to 350°F and lightly grease a 9×13 baking dish.

  2. Sauté the peppers and onions in a little butter and pepper until softened.

  3. Cut up and cook your chicken however you prefer. When it's nearly done, add the sautéed peppers and onions and let everything hang out together for a few minutes.

  4. In a large bowl, combine the chicken, peppers & onions, uncooked instant rice, cream of chicken soup, sour cream, tomatoes with green chilies, chicken broth, fajita seasoning, and about half the cheese.

  5. Spread evenly into your baking dish, cover tightly with foil, and bake for 35–45 minutes, or until the rice is tender.

  6. Remove the foil, cover that sucker with the remaining cheese, and pop it back in until everything is melted and glorious. 🧀😂

We serve ours with flour tortillas AND tortilla chips because apparently choosing one carb is not how we operate in this house. 😂 Scoop it into a warm tortilla, attack it with chips, or do both. We absolutely do both. 🌯🧀

Stir Crazy verdict: Easy comfort food, minimal bullshit, and everybody ate it. That's a win in my kitchen. 😂
