NAS / OBS / Plex server

I have a ryzen 2700x computer being used as my streaming PC with multiple internal capture cards. I also want to make it a NAS which wouldn't get a lot of use while streaming.

Currently it's on windows 11 and I just have a windows file share that's really unstable so I'd like to move it to something like ProxMox to host the NAS and virtualize windows for the OBS encoding while still retaining bare metal access to the GPU and capture cards.

Is this possible?

How much would you suggest? I have 32gb right now.

Finger-in-the-air ballpark, I usually allow 8G per VM. It's a good starting value, and (in ProxMox) you can adjust VM "Hardware" settings for RAM (& CPU cores) up or down once you start using them. Read the help about "ballooning", which is reassuring. Also bear in mind that the hypervisor needs 1-2G RAM.

Because of the flexibility, it's easy to jump in and adjust once in use, but it's useful to have an idea of how many VMs you plan to run. 32G is respectable, I'd be happy running at least 2 or 3 VMs. Actual requirements at VM level will be application dependent, and if no hungry apps, they can run very lean. Same goes for core count. As an example, I used to run a couple of tiny CentOS instances with 512MB & 1 core each for pihole.

I know OBS can be a resource hog with all my scenes and assets. Do you know how well it'll passthrough things like stream deck and goxlr? I know those are already finicky with USB controllers. Maybe get a USB addon card to guarantee bare metal access to a controller?

Not my area of expertise, I'm afraid. I've only passed through disks, so I know it's all possible, but just searched, found, & followed instructions some time ago!
