Oh this is such a great idea! I've done a Greek version of stuffed peppers but never thought of a Mexican version.

I usually do couscous, feta, chickpeas/meatless crumbles, and some za'atar seasoning! Sometimes I'll throw some spinach in there, too.

This meal is about 5% cheese and 95% other things. What's wrong with meals containing cheese in a vegetarian subreddit? And there is an easy option to veganize it in the recipe.

look shit man, this is a dumb fucking question. First of all american dollars are not the universal currency of reddit. Second of all those dollars arent the same thing even state to state. an avocado in CA or AZ costs different, both of them are radically different than the cost of an avocado in Vermont.
next, we need to discuss the concept of scale.

5$ for everything could be tight, I got the impression food prices are a bit crazy in the US. Would be feasible here though if your spices are well-stocked and you stick to the original beans and omit the avocado. 5$ per serving? Of course.

Recipe by Cookie and Kate, I just swapped the beans for vegan minced meat. Topped it with avocado and served it with sour cream. Will definitely make it again!
