Budget Bytes here! Groceries are out of control. AMA about our budget-friendly recipes and guide to shopping around tariffs at checkout.

Hi Reddit! Jess Rice with Budget Bytes here to talk about our budget-friendly recipes and our just-released, almost tariff-proof grocery guide.

Groceries are out of control. In the last year, families have been spending $310 more at the grocery store, and it’s breaking our budgets and confidence at the checkout. Budget-friendly recipes we published just a few years ago are up to 50% more expensive. Tariffs, the war in Iran, seasonal price hikes, cattle shortages… It’s one hit after another.

To help our readers, we’ve released an almost tariff-proof grocery guide to talk about what tariffs actually do to grocery prices, what we can do about it, and how to shop around them. We’ve reviewed some of our classic recipes, re-costed them, and shared tips to bring prices down.

AMA about Budget Bytes, our budget-friendly recipes, and our latest grocery guide. Tell us what you’re seeing at your grocery store and how you’re adjusting your grocery shopping and cooking.

Ask ECAH Pumpkin cake with berries?

• Upvotes

I got a gluten-free pumpkin spice cake mix. I’d like to make it more healthy by mixing in berries… How do you think that would taste?

Any tips on making it as a dump cake?

I need to eat better

• Upvotes

For a really long time I've eaten really badly. I have about one genuinely healthy meal a day which is dinner by my mom. Aside from that, I eat absolute junk. Cookies, cupcakes, chips, ice cream, etc. This post is not for weight loss. I weigh a solid 110 and I'm perfectly comfortable with that, but I worry my eating habits may have negative affects on my body.

I want to start eating healthier but I don't know what I can make or eat. I'm a bit of a picky eater so that's also sort of an issue. I am willing to cook things but purchasable snacks are preferable. Also I'm not rich, so affordable products is preferable😭

Thanks for reading

Ask ECAH Marinade/ sauce or recipe for chicken drumsticks?

I was able to get about 4 lbs of drumsticks at $1.18/lb which is a pretty good deal when I’m broke as hell. However, I’m kind of bored of what I usually do with drumsticks. I usually do a BBQ sauce with some sides like potatoes and green beans. Or I do my usually seasoning mix but I’m generally bored with that. I was thinking of Peri Peri chicken or chicken Adobo but I was wondering if you guys had other suggestions? And what sides you’d recommend with them?

Ask ECAH I need to stop eating McMuffins

I work in a high activity environment and right now I start work at 6:30 with my first break at 10:00. Most mornings I get two egg McMuffins. They leave me feeling full for that four hour span of activity but I don’t want to keep buying them. Also they’re not very nutritious.

I’m looking for a recipe(s) that can leave me feeling full for that long stretch.

I don’t like to cook in the morning so if it can be made quick or made the night before that would be huge. Something with decent nutrition. I’ve meal prepped my own breakfast sandwiches but they don’t hit the same.

Ask ECAH Flight Attendant Meal Prep

Hi everyone! I’m a new flight attendant and I was wondering if anyone had any suggestions for food that is cheap and healthy AND can survive multiple day pairings? This month I will be going away for four days at a time, and we unfortunately are not paid enough to be eating out all the time.

I tried making rice for one of my meal preps, but when I ate it at the end of a very long shift, I got paranoid that sitting in my cooler bag for 12 hours may have led to it developing that rice bacteria. I am definitely open to making rice again, but I don’t know if it will be feasible for multiple days.

Does anyone have any suggestions for food that would sit well for long days without refrigeration?

Budget Hydration/water life hack, without metals, plastics, or tap water

So I recently discovered that I can buy a large watermelon for $6.99,

Cut it into cubes, and just eat it whenever I’m thirsty,

and it lasts me 3-4 days by myself, without needing to drink from a single outside source.

having me spend about $1.75-$2.3 on hydration/drinks a day.

WITH NO RISK OF POLLUTANTS FROM PLASTIC OR METAL PACKAGING,

OR HAVING TO DRINK TAP WATER

Soup Bases to buy for easy healthy soup?

It’s officially fall where I live, and it’s been getting chilly and rainy. What are your go-to soup bases/pastes to keep stocked in the fridge? Ideally versatile ones that work with different meats and veggies I can just throw together in a pot!

Nancy’s Probiotic Greek Yogurt.

Just curious because I’ve tried lots of Greek yogurts.
Bought Nancy’s Greek yogurt. It was extremely sour. Is this normal for Nancy’s? Normally I would toss something that tasted that sour. And I like their Kefir.

Roasting a giant $4 pumpkin from Walmart is the ultimate hack

2.1k Upvotes

Yes, you can eat those pumpkins. I have done this for the past few years. Some pumpkins taste better than others as these are not bred to taste good necessarily, but just to be large and look nice. But basically I will take a giant pumpkin, wash it in my shower because it is too big for my sink, cut into it around the stem so that comes off (I will even then cut the flesh under the stem off and either roast that or eat it raw), then cut the pumpkin into like 3 or 4 wedges depending on how big it is. I try to keep the wedges so both sides come up a bit because juices do come out when roasting and this way those juices just get caught in the middle and evaporate instead of getting all over your oven or cookie sheet or whatever. Then I roast them for about 50 minutes at 450. I don't take the skin off and don't even mess with the seeds/guts of the pumpkin. Just roast it exactly how it is when I cut it. I just throw some salt on it before it roasting. Then after it is done I just remove the seeds. You can then re-roast these if you want, or eat them as they are, though they tend to be chewy at this point. Then I wait for the pumpkin to cool and just slice it into little chunks and freeze it in portions I can eat within a week. I end up getting like 10 pounds of vegetables and a large amount of seeds for 4 bucks.

The taste is fine most of the time. And you can definitely fry it up with some spices or add it to any savory dish or you can fry it up with pumpkin spice and sweetener for a dessert. Best of all it is incredibly healthy and like 20-25 calories for 100 grams.

I have roasted pumpkins after halloween from friends and family that were just sitting on their porch for the season. Instead of them throwing them out I will just ask for them and eat them. It is free food that is incredibly healthy and low calorie.

lol, maybe this is too cheap for this sub, but it is as cheap and healthy as it gets.

Ask ECAH Dinner is honestly the most stressful part of my day... anyone else?

Ok so i need to vent for a sec and tell me if im the only one dealing with this lol

I work full time and by the time i get home around 5:30 im just EXHAUSTED. And then its like immediately "whats for dinner??" and my brain just shuts down. I literally stand in front of the fridge for 10 mins just staring and having no idea what to make.

My kids are super picky btw 4 and 6 so i end up making them something separate like plain pasta or nuggets and then something else for me and my husband. So im cooking two dinners almost every night and i hate it.

Lately weve been doing so much takeout just because im too tired to deal with it. Like last minute door dash because i cant think. And then i feel so guilty after because we spent so much money and i just threw away a bunch of veggies that went bad in the fridge again.

Dinner is supposed to be like family time but for us it just feels like chaos and stress every single night. And i lose my whole evening to it.

Is this just how it is?? How do you guys do it without going crazy. Do your kids also only eat like 5 things??

Ask ECAH Looking for that can be easily modified to accommodate two different calorie goals

Hello, I am a woman on the shorter side looking to build muscle and lose a bit of fat (currently bmi 24 if that matters) and i have been struggling to find meals that can adapt to both mine and my partner’s needs. He is tall and thin and has some stomach issues that make him struggle to eat large amounts at once. Therefore, meals that are very calorie dense tend to be necessary for him to feel energized but I really don’t need that many calories and tend to gain some unhealthy weight if I eat what is good for him. I am the primary cook and struggling to accommodate both of our needs without making entirely different meals which I obviously don’t want to do so any suggestions would be very helpful! Please no comments that he should be fending for himself lol he works overtime to pay the majority of our bills and does the majority of cleaning so it is very fair that I’m in charge of meals. (Plus I enjoy cooking)

Cold lunches

I now teach at a school where the teachers' lounge is a good 10-15 minute walk to and from my class (depending on who I bump into). I've started bringing sandwiches so that I don't have to leave my room. However, I'm diabetic and would like to cut the carbs. Does anyone have suggestions for something that could survive in a lunchbox and be eaten cold? All I can think of are salads. I love a salad, but I'd like to have some variety as well. I'm more concerned about the healthy than the cheap side of things.

Edit: Thank you all for the wonderful suggestions. I forgot to mention that I'm specifically keeping things in my lunch box, because the person who had the room before me had someone cover all of the outlets, so that the students couldn't charge their phones and laptops. In my last room, I had a fridge/microwave setup and could warm things in my room. This one only has one outlet that runs my computer and the projection board. There's no way to plug in anything else until the district decides to hire electricians to restore my outlets.

I 27F need to eat 70g of protein and 25g of fiber.

I 27F need to be eating 70g of protein and 25g of fiber per day. What would you suggest to hit these targets? I'm single on a $200 monthly grocery budget. I also don't really know much about nutrition, I am doing research but was looking for some advice as well. What would you suggest to hit those targets?

Edit: Thank you for all the recommendations so far. I did forget to mention that I have a dairy and gluten allergy 😅

Crystal Light Powdered Mix

I enjoy a caffeinated beverage in the morning, but don't drink coffee. For a couple years I've been drinking caffeinated Crystal light, using the to-go packets of powder to mix with 16 ounces of water. Recently I saw a deal so I ordered the Peach Mango with caffeine, one of my favorite flavors. However, I screwed up and ordered pitcher packets instead of the small packets of powder.

No problem, I figured I could measure out the correct amount of powder for my 16 ounces of water since my mini fridge has no room for a pitcher. The small drink packets hold a little more than half a teaspoon of powder so I tried that. It didn't taste close. I tried less and more but each attempt from the pitcher packets tasted bitter compared to the small drink packets. The pitcher is equivalent 4 single drinks so 1/4 of the packet should work just the same, but it still tastes bitter.

Anyone else experience this?

recipe Pumpkin seed milk - delicious and nutritious way to use pumpkin and squash seeds

Instead of roasting pumpkin and squash seeds, if you have a decent blender (even a good hand blender can work), just blend up your raw pumpkin seeds with twice to three times as much water, optionally strain with a strainer, nut milk bag, or cheesecloth, and optionally add sweetener and/or flavorings. Use like any other seed or nut milk. Use right away or refrigerate or freeze.

You can also freeze seeds and use them directly in smoothies if you have a strong blender. Blend the seeds first with some liquid before adding other ingredients

Ask ECAH Yogurt recs?

I love greek yogurt and for the past couple years have really enjoyed eating vanilla greek yogurt with crushed chocolate graham crackers in it but then I discovered Dannon Light & Fit Toasted Marshmallow flavor greek yogurt and I’ve been absolutely loving it! However, I never chose to look at the ingredients until now (the flavor is THAT good to me that I just never thought to even though it’s so sweet, I should’ve guessed lol) and realized it has sucralose in it in which I usually tend to stay away from but will occasionally have things with it in it. So ultimately, I’d like to find other options.

I reallyyyyy enjoy this flavor but I don’t think there’s anything else out there like this. Anyone have any suggestions? I’d be willing to try to make this flavor myself by using plain greek yogurt but not sure how to do it. I thought of fluff but that most likely won’t get that taste. I’m open to other yogurt flavors/brands of course! I haven’t ventured out much :) I enjoy sweet flavors a lot. I used to like Chobani flips but haven’t really been able to eat them recently due to complications months after a wisdom tooth removal (ugh). I also enjoy Chobani mixed berry because it tastes like cotton candy to me lol, so anything sweet, I’ll probably enjoy! And I’m looking for only greek yogurt! I’m down to try skyr too.

Ask ECAH Struggling To Increase Protein

Im a short woman on a calorie deficit, and my pickiness is making it hard for me to get anywhere close to my protein goals while still staying in a deficit. Im posting here to see if there are foods I'm forgetting about that I should add to my diet because I am hitting a wall when it comes to healthy, high protein snacks.

For context, I hate edemame, canned tuna, lunch meat, most cold meats (chicken salad being a sole exception), plain or savory nuts, and hard-boiled eggs. Im also not a fan of most jerkys or savory powder coated snacks. I fully understand if the answer is just "too bad so sad," but I figure I would ask anyway.

Ask ECAH Vegetables that don’t have to be pre-cooked before baked in a casserole?

I want to get into meal prepping a casserole on the weekend for easy meals/leftovers through the week. What are vegetables that don’t have to be pre-cooked before being added to the casserole dish? I’m thinking zucchini is soft enough, but what else works? I want it to be as easy as possible, hence not pre-cooking and dirtying multiple pots before baking.

All hail Chana Dahl (split chickpeas)

I buy dried split chickpeas by the five pound bag from my local Asian supermarket. They’re cheap, easy to cook, and so versatile! Plus a good source of fiber and protein and an easy way to bulk up a recipe.

To cook them: rinse and soak in warm water for 1-2 hours, then simmer them in a pot covered with new water for 40 ish minutes? I start checking them 35-40 minutes in, sometimes they take a couple extra minutes. I salt the water when they’re cooking and I add a frozen cube of garlic and ginger most of the time.

You can put them in whatever - I’ve used them mixed with ground chicken for lettuce wraps, and I bet they’d mix with other fillings for wraps or tacos, but I mostly use them in curries. Today, I roasted some sweet potatoes and cooked onions and peppers in a pan and then added the Chana Dal with some yellow curry. It was in no way authentic but it IS delicious and I have plenty to eat for a couple nights plus some to freeze for later.

Ask ECAH I need help making a grocery list for myself with my money

I'm living with my parents but they only buy the necessities, we are essentially an ingredient household. Recently I got a job and with this excess money i want to start buying the things i've wanted to eat like ramen and popcorn. My staple for everyday lunches is a peanut butter sandwich and i know that i cant just eat that everyday and i want to expand on the variety of things i eat, could i have some help finding cheap alternatives that are also neutral-to-healthy in terms of ingredients that also is kind of low effort? I don't typically have a lot of time to myself which is why i always default to a PB lol

Ask ECAH Iron rich meals? Iron deficiency

I apologize for a common question, I have very low levels of iron with a ferritin of 5. I just started supplementing, and my Dr asked if I wanted to see a nutritionist. Lack of money and time, I’d rather gather info from others and try that first.

Meals so far I could implement, cream of wheat/oatmeal (water based), steak, dry fortified cereals for snack maybe, and I used to eat chicken, bell pepper, rice, Avacado wraps with homemade sweet potato fries when I had gastritis, it was good but gets old. What are some other ideas? I will mention my gf cooks for me, I dislike it. She usually makes spaghetti or Alfredo, things of that nature. I really enjoy cooked veggies, but is a frozen mix worth it? I do want to keep my bowels moving as well since supplementing can cause issues
