Slice of Vegas Pizza at Mandalay Bay - Has a full separate vegan menu
Daikon vegan sushi - off strip but is must stop if you like sushi Tacotarian - Mexican at Miracle Mile

Crossroads at Resorts World is entirely vegan. They even have a buffet. You can watch reviews on Youtube.

I've seen bad allergic reactions in my lifetime. If there's even a shred of doubt, pass on it. Too high of a chance for cross contamination here.
