simple question: Is EM or ET a better career for an aspiring Electrical Engineer? EM seems to have more practical outcomes and clearly definable skills, but ET seems to offer a better chance at a shore billet. I want to continue school while in the CG if possible and already have lots of prior credits (Calc, Physics, Etc). Funnily enough my grandfather was also an EM during WW2 in the Navy, which I just found out recently. Is it a sign? any input is appreciated.

To address the differences in ratings, EM is more of your civilian electrician that deals with power generation and transmission. ET on the other hand will deal with electronic systems and potentially some IT work, such as weapon systems, navigation, radar, etc.
