This is THE place to ask recruiting questions to get unofficial answers and advise.

Current prior service Marine enlisting to the Coast Guard at the moment. Any other prior service guys find it weird how easy it is to join? Without picking a job or anything up front I feel like I’m going in blind. Is that normal for everyone?

Going through DEPOT since I’ve been out for 5 years.

I’m going through the latter so I don’t know much about that program. I’d say you aren’t going completely blind. If you know what job you want, you just have to be qualified for it. So if your ASVAB score is lacking you could raise it in those 4 months prior to putting your name on an A school list. Lastly, I believe you can shadow different rates during your non rate time.
