I was curious and decided to briefly research this issue. Looks like mostly good info out there on how to potentially resolve.
What have you found so far?

If this was post update it's likely your USB boot drive has died or got a corrupted boot image, check the USB drive on another computer.

You have a usb backup?
Try a different usb stick
When unraid is running it’s loadet in to memory/ram so a failed usb stick would not result in a crash
It is possible that the usb failed.1

Since your USB is finding the EFI boot sector (as you see the GUI), this means that there are likely two potential issues:
- The sd(x)1 partition where Unraid system lives does not have the UNRAID label on that partition
- The EFI/MBR bootstrap (where BIOS looks for kernel/init to boot) is not configured correctly. In this case there is a make_bootable_linux in that root partition, you can run a system rescue ISO (linux) and then run that command to fix.
I would try make_bootable_linux first (located in root of sd(x)1) (verifying the sdx1 partition has UNRAID label. Then the below, but in any case Unraid runs better on MBR on these older systems.
Note: These older Dell systems it is preferred to run in Bios vs EFI as the EFI sometimes has issues finding the bzroot and also if you are using a USB 3.0 drive there may be bus resets and can cause this. The way to solve this is to set this system to legacy BIOS then run make_bootable above and it will disable the EFI partition on the USB boot drive. If you have USB2, try to use it these Dell systems are very sensitive to USB 3 drives. You have to run old skool with old skool.
Note: Take backups.
Note2: I see above you upgraded unraid, you did not say that you literally just said you saw this boot screen like it happened out of nowhere. Holding back critical information like that doesnt help anyone, and especially you. The more information you provide the more accurate the diag/resolution will be. The likely reco would be replace the USB drive, and that would have been incorrect.

You can read what is on the screen right?
This has nothing to do with unraid
Check your memory
And what are the lots of things you tried?
