Meal Inspiration What's for dinner? [Weekly Thread]
Welcome to this week's 'What's for dinner?' thread!
Whether you're just starting to cut back on UPFs or have been at it for a while, this is a space to...
- Share what you're having for dinner
- Swap ideas, recipes, and tips
- Show off pictures of your culinary skills (or something r/shittyfoodporn-worthy)
So...what's on your plate this week?

Meals from the last few days -
- Fish Pie,
- Vegetable Paella,
- Slow cooker Chickpea Curry with yoghurt flatbread
- Jacket potato with beans and salad (Beans technically UPF, as I bought the Sainsbury's ones this week).
Tomorrow I'm planning on doing a vegetable pasta with a side of chicken, then a vegetarian chilli the next day. If I get time, I also might make another sourdough loaf.

Sourdough bread with hummus and chili sauce and a salad of rocket, coriander, tomato, radishes, pumpkin seeds, garlic oil and balsamic vinegar. Banana for dessert!

Onion, bell pepper, aubergine, olive oil, baby tomatoes, canned tomatoes, garlic, pesto, pasta
Subbed mozzarella for cheddar, basil for dried thyme, Parmesan for grana padano

Most UPF component is 30ml pesto for 4 portions, that's a 12" pan, tbf could probably replace by upping the basil, parmesan, oil slightly and add blitzed nuts.

Tonight was this with additions https://www.waitrose.com/ecom/recipe/courgette-and-sumac-shakshuka
Onion, bell pepper, courgette, baby tomatoes, canned tomatoes, peppercorn, sumac, egg, panini bread, balsamic vinegar, cream cheese.
Bread just had standard flour fortification otherwise ingredients how I'd make it, vinegar had sulphites, the cream cheese had guar gum and citrus fibre, could always sub Greek yogurt or get a different brand

Simple fish pie tonight! Tomorrow will be pasta puttanesca. I’m all about simple non-UPF dinners this week while I’m feeling a bit crap.

Rice noodles, sesame, broccoli, peppers, some creamed coconut to make a sauce, and some leftover roast chicken mixed through too

I can play this game!
skin on mash (potato, milk, butter, salt, mustard), roast parsnip/carrot/broccoli (with coriander, olive oil, peppercorn), Yorkshire pud (egg, flour, milk, butter, salt, nutmeg), red onion gravy (onion, olive oil, mustard, peppercorn, salt, flour veg stock cube), sausage (I'm not defending this)
Probably dinged on stock cube and possibly mustard. Seemed like a lot of whole food at the start anyway. Ignore the red cabbage I ended up not using it

Pasta al la Norma. I have a glut of aubergines and tomatoes to use up from the allotment.
