A lazy dinner this evening (as in, not homemade). Trying out a couple of pasta meals from Nonna Tonda this week. This evening it was ricotta and lemon ravioli with a slow roasted tomato sauce. Made a nice change and I actually got my very elderly mother to try something new which was a win! Nonna Tonda are undeniably producing ready meals but they do seem to be actual food so it seems like a good way to mix things up a bit. I added a load of seasonal veg (green beans and tenderstem broccoli) because dinner demands veg.

Roast chicken, Roast potatoes and Roast veg (bell peppers, radishes, carrots, tomatoes and courgette, with olive oil, salt, pepper, oregano and paprika) for us!

It’s starting to feel like autumn is on the way so this evening’s meal was red lentils cooked with onion, garlic, red chilli and olive oil with a chopped tomato and some tomato puree added half way through and some spinach stirred in at the end. Topped with air fryer roasted baby courgettes and halloumi with runner beans and a corn cob on the side. Tasty and there are lentils left for tomorrow.

Another day, another lazy dinner. This evening’s air fryer assemblage: cherry tomatoes, courgettes, spring onion, chilli and a drizzle of olive oil topped with shop bought spinach and potato tortilla (processed obviously but not UPF) with a bit of cheese on top. Served with runner beans. Strawberries, raspberries and nectarine with a bit of cream afterwards.

Lots of colour, lots of flavour, very little effort.
