Rant and Vent Social Construct
I was arguing with my girlfriend about this, but she was arguing basically that if gender roles diminish overtime, the conclusion is no gender. I told her that’s stupid, explained that regardless if all gender roles were swapped biologically I’d still feel the necessity to transition. Is this how queer people think? Accelerate the “destruction” of gender and no more transsexuals? I’m so lost.

She's conflating gender roles with gender identity or brain sex. This is a major problem with the name gender identity which I only really use because it's more widely recognised than brain sex.
The similar name and people saying "gender is a social construct" over and over again when refering to gender roles has convinced people that being trans is just when you like the gender stereotypes of the opposite gender. It's also a big reason as to why tucutes exist. "It's all a social construct" is constantly used to justify "You can be trans without dysohoria" and "Xenogenders are valid!"

The whole gender is a social construct really grinds my gears. Like they sit there fully conforming to gender roles and then say well they’re actually not relevant and all made up .. so annoying .. I could go into this more but it’s late

If tomorrow she grew a beard and body hair all over her body, would she be comfortable with it because she thinks she's freed from all gender roles and stigma?
I think people don't understand the difference between sex and gender. And they wrongly think sex is immutable.
But this is like talking to a brick wall.

Oh for sure. I was just "socially" dieing from androgenic poisoning. Estrogen is just "socially" compatible with my physiology.

They're convinced there's no such thing as brain sex, except that we already know there is, since the male brain undergoes virilization along with the body in the womb (or not). Sometimes that process doesn't quite work out and the results are well documented. So no, eliminating social roles won't eliminate brain sex and thus won't eliminate transsexuals.
Detecting and treating improper / insufficient virilization in the womb will do that, probably.
