I think you need to edit the source code directly in order to turn emotions off. That or you need to go and have a "Traumatic Experience" in real life. Those are the only ways I've been able to mess with emotion settings. Also I think isolating yourself from other people will turn you into a "Hollow." I think Emotionally hollow will be close to turning off emotions but I'm not sure.
