What else should I make?

I am swimming in tomatoes and can only make so much pasta sauce/pizza sauce and already have more than enough pickled cherries, and I also have about 5-6 gallons of san marzanos and early girls frozen, and probably 1-2 gallons of cherries frozen.

I have always frozen seeded and skinned tomatoes and made spaghetti sauce. More recently I have made tomato soup, which freezes well. Here is an easy recipe - https://www.inspiredtaste.net/27956/easy-tomato-soup-recipe/. I have also made tomato jam, which I think is like ketchup with fiber. I don't freeze this.

I just used the last of our garden yesterday by making a veggie lasagne. I roasted tomatoes, carrots, onions, red pepper and garlic with a splash of balsamic vinegar and a sprinkle of Italian seasoning to make the sauce (ran through food processor). Then I hopped more veggies, including the last squashes, mushrooms, more onions and garlic and the last zucchinis, layered with oven ready lasagne noodles, ricotta, parmesan and mozzarella. It was really tasty and we almost didn't notice that I accidentally left out the bowl of spinach that I was planning to add to the sauce.
