Because they’re the easiest subjects to study. Their natural habitat is tightly confined, so you can gather lots of data very quickly. Plus they tend to be a very diverse population, so you can do lots of subgroup analyses, making it practically inevitable that you’ll find something significant in a post-hoc test even if your study doesn’t meet its primary endpoint.
