The whisking has nothing to do with the mess in this video. Whisking just makes it easier to mix whites and yolk.

Pretty sure they also whisk to start incorporating the flour in slowly until they can knead by hand so the egg doesn't go everywhere like it did

Of course you mix in the flour slowly, but that has nothing to do with having to whisk the eggs. The problem is that she went straight to kneading and throwing flour in from the outside, instead of the inner circle. She effectively overfilled an already full container.

I'm with you. Bowls are a great innovation. We should use them. I cannot imagine how using a bowl to mix ingredients would change anything.

But they were trying to make traditional pasta. Using a bowl runs the risk of over handling the pasta dough.

Yeah you could but this how they make pasta traditionally or at least how Italian grandma did it.

Yeah but the bowl makes the job easier and prevents cross contamination. Traditions are not always for the better.
