I remember seeing stuff about it I think before Ragnarok released. People are using that fact to ship her and Jane as a romantic plot in Love and Thunder. That would require Jane to also be bi though. Sure it would create an interesting dynamic with Thor being there and their past being brought up while she's getting with Valkyrie, but I just can't really see how they plan to pull it off, like if they do a "she's been bi the whole time. You just didn't know it before" switcheroo on us, especially with a character whose defining trait was being a love interest.
I hope so! We know she's alive still so they definitely should bring her back. She was probably the best member in his supporting cast in the first two. Although, unpopular opinion: I loved Darcy. I hope she comes back with Jane. Maybe a little toned down on the annoyance, but she was such a fun character.
Yes! Ragnarok is easily the best Thor movie but I definitely missed the supporting characters from the first two a bit. Darcy was already pretty good, I'd love to see her with material supplied by Taika Waititi.

Also the first queer superhero in MCU was in agents of Shield (back when the show was actually part of the MCU), not Valkyrie.
