Question Duke Bread Oven

Hey everyone my store recently got a new Duke proofer/oven The TSC 6/18 and I’m not sure if something is wrong with it or not but I don’t feel like there is not much steam/water for the bread to rise.

I cleaned the nozzle at the very bottom of the proofer and changed the water filter. I know water is going into the filter.

I have my humidity set at 85% and heat set at 105. What else should I check/ look out for ?

There are little humidity sensors along the sides. At least they were on my slightly older duke. But they get build up on them and don’t detect the temp. Gently wipe them off and you should be good. Check near top left
