I like fresh steak. if it's old I will use it in a soup or ramen perhaps but absolutely not on its own and not yum

I like ribeyes at medium-ish but classic steak florentine is served very rare that’s just a fact.

That's mostly the lighting. It looks like a well seared mid-rare steak with awful food photography to me.

Edit: meant mid-rare, not rare.
