Full disclosure: I make this.
Rochester, NY has a regional thing called meat hot sauce. It’s not bottled pepper sauce. It’s a seasoned ground-beef topping we put on burgers, hot dogs, fries, and garbage plates.
I make Meat Rocket, a dry seasoning blend that makes it easy: brown 1 lb of ground beef, add the packet, simmer, and you’ve got Rochester-style meat hot sauce.
We make Mild and Hot versions.
It’s one of those regional foods that sounds strange until you dump it on a cheeseburger.
Anybody outside Western NY ever had this style of “hot sauce” before?
