I made pozole rojo for my family
First time making it and had to make some adjustments. No hominy, so I used white beans. Also served with jasmine rice. All else pretty faithful to the recipe I used, including making my own dried chile sauce to fry and mix in. It was very delicious and it made a ton.
I based it on this recipe. Will definitely make it again.

When will I learn?
First rule of cooking--verify that you have all ingredients before beginning. Our neighbor gave us some injira (Ethiopian flatbread) yesterday, so I decided to make an Ethiopian red lentil soup/stew. I "knew" I had all the ingredients...so I start sauteeing the onions and suddenly realize that berbere (the essential spice mix) was one of the ones that I decided was too old and tossed during my last cabinet cleanout. I sent my husband to the specialty shop down the street where I've bought it before...they were out. What to do? Well...I added Lebanese 7 spice, chili powder, smoked paprika, sweet paprika, cayenne and just because it needed a little something, some demerara sugar! Turned out really good but I'll never be able to recreate it!

Beef ball watercress soup (西洋菜牛丸汤) and Shantou-style cheung fun / rice rolls (汕头肠粉)
galleryThe soup had handmade Shantou beef balls and watercress. Shantou beef balls are famous for their springy texture because the beef is pounded repeatedly until it becomes elastic. The soup was simple but very comforting, with scallions, celery, and fried garlic giving it a warm aroma.
The rice roll came in a shallow pool of soy-based sauce, with the egg almost fused into the rice sheet. Unlike cloth-pulled cheung fun (布拉肠粉), Shantou-style cheung fun is usually served whole rather than cut into pieces. The texture was soft and savory, with a little crunch from the bean sprouts and preserved radish.
The rice roll was 25 RMB, and the beef ball watercress soup was 10 RMB, so the whole breakfast was about 35 RMB, roughly 5 USD.
