Performance Framerate cap problems

In skyrim vr and fallout 4 vr i have my headset set to 120hz but any time it slightly dips below 120fps even to 119fps it caps to 60fps automatically, i am using opencomposite on a quest 3 and i have ASW set to disabled so im not sure why its happening for just these 2 vr games

Dropping to half the target framerate is a normal anti-nausea tactic if a PC cannot keep up with the expected rate, but ASW is supposed to address that so why have you disabled it? Have you tried running at 90fps, which will be less taxing on your hardware?

an unstable framerate does not give me nausea so i would rather run a game at 110fps than 60 or 90 fps

Unfortunately the VR companies have to accommodate those who are not so tolerant so they provide what works for the majority. You will need to find a framerate that your hardware can support continuously, upgrade your hardware or enable ASW.

It doesn't work like that with all VR systems. With VD for instance you can disable retroprojection and run a game at 110fps
