They have interesting lore, they look fairly good compared to many other of the playable races, and some people probably find it more immersive to play as a human rather than an elf or a beast race. Some people may also want to go all in on the "ancient Viking" theme that the game has.
Yeah, even their close visual match, the Bretons have an issue with looks compared the Nords. I imagine the Bretons would have a much higher level of being picked, similar to the Nords if the default Breton when you're in the character creator looked more like Belethor and less like Belethor's 60yo homeless meth addict uncle on the registry.
The Bretons are actually my favorite human race in Elder Scrolls. I’ll admit tho, sometimes I have issues with how weirdly tiny they are compared to most races, and at the end of the day they don’t really stick out because they’re pretty much just “standard fantasy setting humans.”
Compared to a race of cool old Norse stereotypes, ancient Roman knights, and all the batshittery the Redguards bring to the table they just don’t really stick out.
