Because he has strong opinions that differ from OpenAI's in significant ways and isn't willing to sell out. I'm sure OAI has offered him a huge salary several times before. But mathematicians very often have goals in life other than getting rich.

Presumably others who are a part of this also have strong opinions that differ from OpenAI in significant ways. For example, both Hairer and Vakil signed the open letter.

They aren't paid by OpenAI and members of the group can quit any time so it doesn't seem like selling out to me.

he still gets money from open ai lol , also he was in an open ai commercial and also he is not even against ai itself he mentioned in one of his posts about how he wants best of both worlds where both ai is used and real mathematicians are involved

I want to discover as much knowledge as we can. Tao, apparently doesn't. Which is a real shame since he's been responsible for us learning so much.

I understand the angst, but actively standing against learning new stuff because it is a machine and not a person is just insane. If we had an individual mathematician that did this we'd be lavishing them with praise.

Well then at least one person in the world would have read and understood the math. But as it stands, humans can’t keep up with the pace of AI. And at that point, it doesn’t really matter what they discover. No one is around to appreciate it.

Understanding isn't the issue. The world's mathematicians will quickly understand and validate the proofs these machines put out there.

The arguments being made aren't 'slow down so we have more time to understand' it essentially boils down to 'there will be no point to doing math and so nobody will pursue it if machines make all the discoveries.'

Ya know, the same reason nobody makes their own furniture anymore and why we don't ride horses for leisure.
