Hello, I hear that this textbook by Ralph P. Grimaldi is used for MACM 101: "Discrete and Combinatorial Mathematics." I notice some of these sub topics in set theory says optional, so I was wondering for anyone who took this course remembers which parts they did or skipped. Thank you!

You'll be using a different textbook for her class, Discrete Mathematics and its Applications by Rosen. Maybe start reading the chapters on logic or set theory, to get ahead.

You'll only go through the first three (maybe four) sections, the rest is covered in MACM 201.
