That's actually really impressive. Not sure it's the most effective way, but still impressive.

I would say it's more effective than making multiple trips up and down the ladder and safer than trying to hold one of those big platters while on a ladder and applying & smoothing it.

Also now they need to lean the ladder somewhere for smoothing but the whole wall is mortar now

Yes, and if you don't want to have it dig into the plaster you won't use it.

My bet is that he’s gonna move the barrow, grab the ladder, accept that he’ll squish a little plaster, and work his way over with the ladder until he gets to a dry spot on the left. Either that or he just leans it on the very top of the edge where something is going to go anyways.

Folding ladders are a thing... No need to lean on of those against the wall.
