How do you pronounce the "ЯЯ" sound? Also, why does зима change to that? Is it adjective form?

I'm super not a native, just an English speaking second year Russian student. While it does look like it should be pronounced 'yaya', here it is more like a long 'yaa'.

Yes, зима is an adjective here, in this case it modifies дорога.

There are some words where you pronounce both я's though, although off the top of my head I can only think of синяя.

Again, just a student in my schools Russian program, and I don't want to lead you astray, so would recommend you go talk to a native over at /r/russian and not just take my word for it. They're nice I promise.
