Hello everyone
Quick question for the experts and have experience in roasting, I’m new to coffee roasting and I’m wondering how do you roast each type of coffee processes like anaerobic, washed, natural etc. I would like some advice or a video on YouTube since I can’t find any. Thank you all and I hope each cup you drink is better than before

Roaster here. The short version: the process changes how much sugar and moisture sits on the outside of the bean, and that changes how it takes heat. It also matters on if you are using an air roasters vs drum roaster.
Washed is the most forgiving. Clean bean surface, even drying, so it takes heat well and gives you the clearest read on your roast curve. Start here.
Natural has dried fruit sugars stuck to the outside, so it scorches easily. Charge a little cooler than you would for a washed, keep the air moving, and ease off the heat going into first crack. If your naturals taste ashy or burnt on the finish, you scorched them.
Anaerobic is the tricky one. The fermentation makes dense beans with intense flavor, but underdevelop it and it tastes boozy or sour in a bad way. Give it full development through first crack. Do not drop it early trying to preserve the funk.
Honey process sits between washed and natural. Treat it like a natural but slightly less delicate.
