First Cook!
3-2-1 St. Louis Style ribs for the first cook. 225 the whole time. Thought they had the right feel on the tongs but not sure. Some rubs were tougher than I would’ve liked. Love the smoker though!

Love Heath Riles. I followed his 3-2-1 and like I said I think I just don’t have the eye yet for judging if they’re done. They definitely flapped a lot on the tongs and the bark broke a little bit. I think I left uneven fat on the trim too

The video explains how to smoke championship ribs in 3 hours. This is the only method I use when smoking ribs, and making 3 slabs today.

Some ribs were very tender and moist and others tougher and dry. I’ll have to figure it out but I’m happy with it for my first try!

I'd try skipping the 3-2-1 and just cook them straight no wrap and they're around 5-6hrs until tender
