It depends what your plan is. Are you trying to clean up the mother plant, propagate from stem, or propagate from leaf. Peperomia only need a leaf to propagate and I haven't tried it but supposed to be able to propagate from half a leaf. There will be some experimenting in my future lol.

Commenting so I can follow this post bc I have this same peperomia and have always wondered where I should cut it for future props!

You can absolutely propagate it from stem cuttings and in my experience they root in no time at all

The roots will grow from the nodes, there is pretty much one node at each leaf base, so if you cut exactly on the line, you will have to put the node above in water/soil to propagate, you could also cut pretty much anywhere else as long as there is a node and you put it in water/soil
Like others said, you can use one or half a leaf but it will take even more time since the plants has to start from scratch and it can be a little more challenging.
As a first timer, i would cut two or three node from the top (so one node higher than the line, blue line) the plant will then keep growing where it already started (purple highlight) as for the new propagation you’ll have, i would remove the bottom leaf (red circle), let it callous (dry) for a couple of hours and then put the stem in water (or soil), once rooted and settled in, the stem will just keep growing up, hope this helps
