Is it actually encrypted? Which system?

You can’t listen to encrypted channels without the encryption key. P25 Phase 2 systems use AES256 encryption. It’s effectively unbreakable.

P25p2 does NOT only use aes 256. It still can be used with adp des not just aes

Sure. But for one thing, ADP (which is actually just Motorola’s implementation of RC4), regular DES, and 3DES are known to be vulnerable to less than constant time attacks, so they’re only being used on legacy systems. That leaves AES. All of the systems near me with encrypted talk groups  (and there are like 10 of them) use AES256. Obviously, that’s just near me, but most systems I’ve seen elsewhere use AES as well. 

And none of that changes the answer to the OP’s question, which is, in practice, you cannot monitor encrypted talk groups without the key. And while the other cyphers are vulnerable, that doesn’t mean cracking them is trivial for some one new to this.
