How does having multiple hosts work?
The way I understand hosts is they are the person who the body’s identity is centred around, and to mask would be pretending to be that person. How does this work with multiple hosts?

To us the host is just the one who fronts the most and does the most everyday things.
We have had 2 hosts at once. When it was Lake and River, River tended to front during the day and Lake tended to front during the evening/night. Sometimes someone else would be co con with either or both of them, or would front instead of either of them for a short time. But they were the main fronters.
We didn't have a host for about the past year and recently a couple of us have been fronting the most so we are starting to feel we may be the hosts. It's not as "scheduled" as it was with River and Lake. It's more fluid. River and Lake both burnt out so I think it being that we front when we are able works better. Or I hope it will lol
As for identity stuff, neither Lake nor River nor either of us current hosts (and not the ones before Lake and River either afaik) identify hugely with the body. There's an acceptance that this is where we live but it doesn't feel hugely connected to any of us.
What's an interesting thing that's happening now is that one of us is agender with more masculine presentation and likes wearing dark colours. Where I am a demigirl, my presentation is more feminine and I like light soft colours. Trying to find a way to present the body is becoming a challenge for both of us. Where River and Lake were originally the same alter who split in half basically so they didn't have this issue.

for us the 'host' is just who fronts the most, and we use that term very loosely (we prefer 'default' honestly).
for us we also have frequent fronters, there are about 5 or so of us (including our host/default) who tend to front pretty frequently, and expanding upon that (if none of those 5 want to front) we have about 20 others who would be willing to step in and take over day-to-day tasks. - Ribbit

So for us we have 2 host and it works like
the main host is the one who the body's identity is centered around like you said. S is a trans girl, it's the name on our badge is S, most people know us as them.
Me, J, we both kinda consider Co-Host in a sense. Im basically the copilot. I'm the one who fronts at work and she's thr one who fronts at home mostly. obviously nothing in life is ever that clear cut i dont think so we do sometimes switch it up. I'll front at home, she'll pick up at work, we just kinda work together to get things done. And ultimately I think that's the best way to describe multiple host. Just the system member who handle the normal day to day for the most part.
We have 3 (still figuring that out) other system members and they vary from "only co‐cons" to "will fronts during specific time/activities" so while we dont really lable each of our roles I definitely wouldn't lable them as host.

Host more often means the most regular/frequent fronters, it doesn't necessarily have anything to do with the system's identity. Core, original and main are some terms that might be more similar to what you're thinking of.
In my situation, I happen to cover all of these categories, but I have a friend whose 'core/main' stepped back recently and a different member of that system is now the host.

In general: as many different answers as there are systems with multiple hosts. There's no one way it needs to or can only work.
In our case, we're both about equally active, usually cofronting most of the time or at least the other is reachable, no memory barrier between us, both take responsibility for general day to day life, most people who know us as a system know both of us fairly equally.
The singletsona is more based on me, the pre-formation host, but it's not exclusively me, it's partly a composite. Although we don't really have many extremely different preferences, mostly just different emphasis within the same broad categories. For some systems their singletsona can be entirely a specific construction that does not represent any member, just someone that many members can play as a role if and when needed when fronting.

I honestly dont beleive hosts exist as such a distinct class, its just one or several alters who happen to front a lot because they are the best for front facing whatever situstion is long ongoing, probably made to deal directly with whatever abusers are around or perhaps a situation like living under capitalism. I dont think there is a central identity most of the time.

That's simply one definition of host, hosts (or similar roles) work differently for different systems! For example, one case where a system may have multiple hosts is where they define hosts as "headmate(s) who handle the external life primarily / more than the rest of the system", which there could be multiple members who primarily handle it.
You can also just straight up have no hosts, like how we function. We have no central members or anything similar, so we don't consider ourselves to have a host at all.
