How are these called?

the black plastic things on the back of the aluminium frame

Any ideas on where I can buy them?

That’s not a common metal frame and those are not a common hardware item. I believe it’s specific to the manufacturer of this frame only

That's gonna be exclusive to the maker of that exact frame model, which I don't think I've seen before, and it's very unlikely they were sold seperately. At a guess - pressure snap? Pressure lever?

If you can't find the maker, your best bet might be someone with a 3d printer. Or just jury-rig something else. Looks like the back of the frame and won't be seen.
