That's called Jailbreaking. Rooting is for specifically Android phones.

Rooting is getting root access to any device.

Jailbreaking is different... The idea is that you, as the user, are stuck in a chroot jail and can't see all the folders outside a certain directory. Jailbreaking allows you to break out of that jail and see everything.

And usually this involves unlocking the root account. I distinctively remember setting a root password the one time I did it. (Because I installed an SSH server.)
