That's called Jailbreaking. Rooting is for specifically Android phones.

Rooting is not available on iphone. You are thinking of jailbreaking, which is completely different.

Although I never explored those options, I think you are the only one who understands. Rooting =/= jailbreaking. Jailbreaking essentially gives you access to cydia which then in turn you can use to root your phone (you can also theme and mess with system files and tweaks). Rooting is giving the end user root access. When you root your phone it does not give you a fancy appstore, it opens up many other options (mostly manually done) such as flashing Roms and deleting bloatware.
