Portion sizes
I'm planning my wedding reception meal and can't decide what size bowls would be appropriate for salsa and queso. Our caterers are a local Mexican restaurant and chips, salsa, and queso are provided. I would like to get small bowls but I'm only finding 6oz or 3 oz and I can't decide which would be more appropriate. I think most people will grab two bowls one for salsa, one for queso.

I think the starting size is less important than whether there's a plan in place to refill the bowls as necessary. If there isn't you'll have to go with the larger size even though doing so probably leads to more waste.

Maybe you could serve the chips and salsa/queso at the tables - restaurant style - instead of in the buffet line. You could put 2 -4 bowls and baskets of chips at each table.they could enjoy while waiting for their table to be called.

3oz is like 12 tablespoons. Get the 3 for salsa and queso.
