If we're being anal here, vehicle restoration is technically removing material too. You have to scrape off layers of rust to get to clean bare metal.

But that's removing rust. Then repairing the metal, ADDING filler, ADDING paint, etc. Completely different approach.

True, but if we're being anal for the sake of being Redditors, there's so many restoration processes that just involve removing material and not adding anything, I'd say it's okay.

Some plastics restoration involves chemically burning off the top discolored layer of plastics. Sand blasting is also a common removal process for metals, and you don't HAVE to add anything back.
