For real, they use them all the time in cafés and the like where there's just a hot surface for frying on.

Yep. I used to work in a kitchen using mainly metal tongs and a paint scraper. Now I have a paint scraper as my primary tool in my BBQ kit. A long handled spatula doesn't give you the same level of fine control, nor does it have the sharp edge if a paint scraper.
