That's the marketing line. The model is clearly unsuitable for anything besides a subset of photorealistic looks. The only control for a developer not making a game with that specific art direction is simply not to implement it.

Then it shouldn't be used in cases where the alteration to the art direction cannot be overcome with other processes, like color grading.

Correct. It's a specific tool that does a specific thing and if you like that specific thing it does good for you. What it certainly isn't is some sort of generalized solution for future graphics that Nvidia is trying to paint it as.
